It says - "If two systems are in independent thermal equilibrium with a third system, then all the three systems are in thermal equilibrium with each other." This law gives us a way to quantify a unit of hotness or coldness of an unknown system by comparing it with a known one.
Now, the first law of thermodynamics states that "When energy passes, as work, as heat, or with matter, into or out from a system, its internal energy changes in accord with the law of conservation of energy." When water or air passes through our system, it tries to achieve thermal equilibrium with the ice-water in the bucket
As a result, some of its thermal energy is transferred to the bucket. Thus, the temperature of the fluid decreases while that of the bucket increases in the proportionate amount of the energy transferred. The pipe is coiled so that the surface area of contact between the fluid and the bucket is increased, leading to a higher thermal transfer.
